　　原来，每100克鸡蛋中含蛋白质14.7克，脂肪11.6克，钙、磷、铁、维生素等物质的含量也很高。但是鸡蛋的蛋白质中，含有抗生素蛋白和抗胰蛋白酶，这两种物质能阻碍蛋白质被人体的分解、消化、吸收。

　　因此，给孩子吃鸡蛋时，必须先将其破坏掉，才能有效地利用鸡蛋中的营养。在高温下，这两种物质可以分解，在没有完全熟的鸡蛋中，这两种物质并没有被破坏，会使一部分蛋白质在体内不能被消化、吸收，而在代谢过程中被排了出去。

　　另外，鸡蛋在形成过程中，细菌可以从母鸡的卵巢直接进入蛋体内。在半熟的鸡蛋里，细菌没有全部被杀死，容易感染疾病。因此，不要给孩子吃半熟的鸡蛋。

　　现在的人吃鸡蛋的花样越来越多了，杨振娥说，喝生鸡蛋、开水冲鸡蛋等不利于人体健康。因为鸡蛋中的生物素对人体是有害的，而这些吃法不能破坏掉生物素。而有些人只吃蛋白或蛋黄，也不够合理。

　　对不同年龄段的人如何吃鸡蛋?零岁至1岁的婴儿适合吃蒸鸡蛋羹或蛋花汤，这两种做法能使蛋白质松解，极易被儿童消化吸收;一两岁之后可以吃煮鸡蛋，两岁后可以吃炒鸡蛋;老年人尽量少吃煎鸡蛋。蒸鸡蛋羹或炒鸡蛋时还可以依个人口味在打好的鸡蛋里加些韭菜、青辣椒、虾米等。

　　如果吃水煮鸡蛋，鸡蛋最好煮得嫩点，即开锅后再煮五六分钟就可以了，此时，鸡蛋的蛋黄刚刚凝固，食用这种状态的鸡蛋，人体对蛋白质的吸收率最高。鸡蛋煮得时间过长，蛋黄的营养素很难被人体吸收。吃煮鸡蛋的时候要细嚼慢咽，否则会影响吸收和消化。
